Nut & Veg Burgers

Tonight I gave it a try to make some burgers, I was so quick serving them up and them being devoured that I didn't get a photo!

Ingredients:

1 onion
1 courgette
1 stick of celery
1 carrot
1 apple
Handful of peanuts
Handful of cashew nuts
Breadcrumbs 
2 tablespoons of self raising flour
Sesame seeds
Sunflower seeds
1 tablepoon of walnuts



Blend walnuts, peanuts and cashews together. 



Grate onion, carrot, courgette, apple, and celery. Before adding to the nuts, squeeze as much water out as you can, through a sieve or in a teatowel. Then add to the nut and blend some more. 


Add the seeds and blend. I used, Rosemary, thyme, parsley, pepper and a sprinkle of chili powder.  

Add in the breadcrumbs and flour, till its socked up lots of the extra water. 


Then roll in your hands into 6 individual balls. Put on a plate, sesame seeds breadcrumbes and then pat down the balls into burger shapes, well coated each side. Put in a baking tray with tinfoil over and cook for about 45min or till cooked through. Take off the tinfoil to brown off. (We were hungry so I took them out and fryed them for a few mins on each side.) 

They where eaten so quick I didn't get a photo but will make again soon!
